Preserved lemons are a traditional ingredient used in many kitchens around the world. With their bold flavor and unique aroma, they can transform ordinary dishes into something extraordinary. The best part? Making them at home is incredibly simple.
Why Preserve Lemons?
Preserving lemons enhances their natural citrus flavor while softening the peel and reducing bitterness. Over time, the salt draws out the juice and creates a rich, tangy brine that can be used in cooking. This method has been used for generations, especially in Mediterranean and North African cuisine.
Ingredients You’ll Need
-
Fresh organic lemons
-
Coarse salt
-
A clean glass jar with a tight lid
Step-by-Step Instructions
1. Prepare the Lemons
Wash the lemons thoroughly. Cut each lemon into four pieces lengthwise, but do not cut all the way through — keep them attached at the base.
2. Add the Salt
Generously sprinkle salt inside each lemon. Make sure the salt reaches deep into the cuts. Salt acts as a natural preservative and helps release the juice.
3. Pack into the Jar
Place the salted lemons tightly into your clean jar. Press them down firmly to release their juice. Add extra salt between layers if needed.
4. Let Time Do the Work
Seal the jar and store it in a cool, dark place. After a few days, the lemons will begin releasing more juice. If necessary, add fresh lemon juice to ensure they are fully submerged.
Allow the lemons to preserve for at least 3–4 weeks before using them.
