No-bake cheesecake is the perfect dessert for people who want to enjoy a delicious cake but don’t have the time or desire to turn on the oven. It is light, creamy, and can be prepared in just a dozen or so minutes. Additionally, it works perfectly for various occasions – from a family afternoon to a gathering with friends.
Ingredients for the Base
The simplest cheesecake base can be made from tea biscuits or digestive biscuits. You will need:

200 g tea biscuits or digestive biscuits,

100 g melted butter,

optionally 1–2 tablespoons of sugar if you prefer a sweeter base.
Crush the biscuits into fine crumbs – you can use a blender or place them in a bag and crush them with a rolling pin. Then mix them with the melted butter and evenly press the mixture into the bottom of a springform pan. Press firmly with a spoon so the base is compact and even.
Cheesecake Filling
The filling is no-bake cheesecake at its best – light, creamy, and full of flavor. You will need:

500 g cream cheese (e.g., Philadelphia-style),

200 ml heavy cream (30% fat), whipped until stiff,

100 g powdered sugar,

1 teaspoon vanilla extract,

10 g gelatin dissolved in 50 ml hot water.
Mix the cream cheese with powdered sugar and vanilla. Then gently fold in the whipped cream. Finally, pour in the dissolved gelatin and carefully but thoroughly combine all the ingredients so the mixture remains fluffy.
Assembling the Cheesecake
Spread the cream filling over the prepared base, smooth the surface with a spatula, and refrigerate for at least 3–4 hours, preferably overnight. This will allow the cheesecake to set properly and make it easy to slice.
